Limburg is a province in the South of The Netherlands, and it is actually where we live. In Limburg, the "vlaai" is very popular, and Dutch people eat it with their eternal "kopje koffie" (cup of coffee), which they are notorious for. Limburg used to be rather poor, and that is why for instance all parts of the animal were used. There are many recipes with the meat, which is normally meant to make stock or broth with, and also sausage made with pig's blood used to be popular. There are also many recipes with potatoes. In the big cities, especially Maastricht, there was a little more money to spend and here, veal would be on the menu from time to time.
In Limburg, many people are catholic, and some time ago that used to be reflected in their eating habits. In the weeks before Easter, they were only allowed to have one meal a day, but that meal would be as calorie rich as they could cope for. To achieve that, heavy pancakes would be served side by side with fat meat. During the year, on Friday meat would be forbidden, and people would eat fish, eggs or vegetarian dishes like heave pea soup. The children would save their sweets and cookies in a cookie jar for four weeks, and then empty the whole jar on Easter day, to be heavily sick afterwards.
There is a special cheese, "Herve", which used to ripen in the marl caves. You can still buy them, but nowadays they usually are produced in Belgium, as the Dutch food law unfortunately does not allow production any longer. The climate is a little warmer than in the rest of The Netherlands, and therefore grapes and berries grow well, which s reflected in a number of recipes as well.
Carnival is a big event in the South of the Netherlands, especially in Limburg. One of the things people eat for this occasion is nonnevotten; these are also served for New Year. For Christmas, in the old days one would serve rabbit in sour sauce.
The party-goers drink "schuss" which is a mixture of beer with a little dark brown beer; they have the habit to start drinking at 10 in the morning in this time of year. When there is "kermis". a wedding or a funeral, this is seen as an occasion to prepare large quantities of delicious food, called "coffee table". Here, various types of bread are served with cheese and cold cuts, vlaai en while the ladies used to get a glass of advocaat, the men would settle for something with a bit more alcohol in it.
