Blini with salmon

Goat cheese rolls

  • 100 GRAM FLOUR
  • 100 GRAM BUCKWHEAT FLOUR
  • 2 EGGS
  • 1 TSP YEAST
  • 1 1/2 CUP MILK
  • 200 GRAM SMOKED SALMON, sliced
  • 1/2 CUP SOUR CREAM

  • 400 GRAM WHOLEMEAL FLOUR
  • 1 TSP YEAST
  • 1 TSP SALT
  • 1 TBSP SUGAR
  • 3 TBSP SUNFLOWER SEED
  • 4 TBSP HONEY
  • 200 GRAM SOFT GOAT CHEESE

Put the flour, buckwheat flour, eggs, yeast and milk together and mix well. Leave the batter for one hour, than bake small pancakes out of it. Distribute the salmon over the pancakes and put a spoon of sour cream on top.

Blini are served on Maslenitsa, "Butter Day" or "Pancake Day" which takes place in February at the start of Lent before Easter. It is related to "Mardi Gras" (Fat Tuesday). It is also celebrated for the end of winter.  Click on culinary calendar for more links between cooking and celebration.

Knead the flour, yeast, salt, sugar, half of the sunflower seeds and 1 cup of water for 10 minutes. Allow the dough to rise and divide it into 8 pieces; roll these out to circles. Distribute first the honey over the circles, than the goat cheese and close the dough around the cheese, press the ends well together. Sprinkle them with the remaining sunflower seeds. Allow the rolls to rise another hour and bake the 25 minutes at 200 degrees Celsius.
