Cut the apples in quarters
(don't peel). Add a few tablespoons of water and bring to the boil.
Cook until the apples are very soft. Put them in a clean dishcloth and
press out all the fluid in a large pan. Cook this juice on high heat
until it becomes syrup (a drop falling from a spoon makes a thread).
Allow the syrup to cool down completely.

Cut the vanilla pod
open and cut it in 4 pieces. Put the vanilla pod together with the sugar
in a jar. Shake this jar once a week; after a month or so the sugar
will taste of vanilla.
