Easter takes place at a different date each year, namely at first Sunday after the first full moon after the 20th of March. Many countries have their traditions and special dishes. Eggs have a prominent place on the Easter menu. After forty days of fasting, without meat, milk products and eggs, people were probably dying for an egg. The Catholics were not allowed to have meat on Friday so on Silent Friday, there would be fish on the menu. In many countries however (like Italy and Greece) one eats lamb.
Orthodox Catholics are even more serious in their fasting and as a result, Easter is celebrated with lots of meat and calorie rich fat and sweet dishes. On the other hand, eggs signify new life, symbolic for the resurrection of Jesus over Easter. In a number of countries (like Italy) young lamb is served, symbolic for the innocence of Jesus.
Some dishes are eaten at specific days around Easter:
hot cross buns in the UK and onion tart from Bari, the capital of Apulia (Italy) were traditionally baked on Silent Friday, and blinis in Russia are served on Fat Tuesday, the day before Lent (Fast period).
