Lamb is under one year of age, otherwise we call it sheep. Suckling lamb is less than 3 months old. Even though the meat of suckling lamb is soft, I find the older lamb tastier; it has more "bite". And I am a hypocrite: I like to see the small lambs jumping around, not on my plate. In many countries however (like Italy and Greece) one eats lamb for Easter. In Uzbekistan lamb kebab was often on the menu. We would call it "babusjka baranina" (grandmother sheep) because it was mostly post-menopausal sheep.
