Meringue gateau

 

Ginataan

  • 4 EGG WHITES
  • 125 GRAM SUGAR
  • 50 GRAM ALMOND PASTE, crumbled
  • 200 GRAM RED FRUIT
  • 1 CUP CREAM
  • 25 GRAM ICING SUGAR
 
  • 200 GRAM PAPAYA, in cubes
  • 200 GRAM PINEAPPLE, in cubes
  • 2 GREEN BANANAS, sliced
  • 100 GRAM TAPIOCA PEARLS
  • 1 CAN COCONUT MILK
  • 75 GRAM SUGAR
  • 4 TABLESPOONS RICE FLOUR

Beat the egg whites until they are fluffy. Slowly add 75 gram sugar, keep beating. Stir in the almond paste. Divide the mixture over 2 round tins and bake the meringue 1 hour at 150 degrees Celsius. Allow to cool down. Whip the cream with the remaining sugar and add the fruit. Put one meringue on a plate, spoon the cream on it and close with the other meringue. Dust with icing sugar.

Meringue is very easy to make and it looks and tastes good. Try also other meringue recipes like

Heat the coconut milk with 1 1/2 cup of water, the sugar, the tapioca pearls, the papaya and the pineapple and simmer for 15 minutes; add the bananas and simmer 10 minutes more. Take the pan off the heat, stir in the rice flour and reheat until the mixture slightly thickens. Serve hot or cold.
