Beat the egg whites until they are fluffy. Slowly
add 75 gram sugar, keep beating. Stir in the almond paste. Divide the
mixture over 2 round tins and bake the meringue 1 hour at 150 degrees
Celsius. Allow to cool down. Whip
the cream with the remaining sugar and add the fruit. Put one meringue
on a plate, spoon the cream on it and close with the other meringue.
Dust with icing sugar.

Heat the coconut milk
with 1 1/2 cup of water, the sugar, the tapioca pearls, the papaya and
the pineapple and simmer for 15 minutes; add the bananas and simmer
10 minutes more. Take the pan off the heat, stir in the rice flour and
reheat until the mixture slightly thickens. Serve hot or cold.
