Green beans with egg

 

Stuffed eggplant slices

  • 500 GRAM FRENCH BEANS
  • 1 ONION, chopped
  • 4 EGGS
  • 4 TBSP BUTTER
  • GREEN HERBS, chopped (parsley, coriander, sage, etc)
 
  • 1 EGGPLANT, in 2 centimeter thick slices
  • 1 POTATO, peeled, cooked 5 minutes and grated
  • 2 CLOVES GARLIC, chopped
  • 1 GREEN CHILI PEPPER, chopped
  • 1 TSP CUMIN SEED
  • 1 CARROT, cleaned and grated
  • 1/4 ONION, chopped
  • 1/2 TSP KURKUMA POWDER
  • 1/2 TSP CHILI POWDER
  • PIECE OF GINGERROOT, grated

Cook the beans 15 minutes. In the meantime, stir fry the onion in the butter; add the beans and heat for one minute. Add the herbs and pepper and salt to taste. Switch off the heat and add the eggs, stir well.

Cut the inside out of the eggplant slices, leave the bottom in. Sprinkle them with salt, leave them for an hour, rinse and dry them. Stir fry the cumin seeds, onion, garlic and pepper 2 minutes; add the carrot and the potato and stir fry 5 Minutes. Add the gingerroot, the chili powder, the kurkuma and salt to taste and stuff the eggplant slices with this mixture. Fry them 2 minutes on each side in the hot oil.
