The cod has proven very useful in the old days: by salting the fish one can keep it for a long time, which was very useful to pass the winter months. Cods like to live in cold water; most of the cod available in Europe is caught in the neighborhood of Iceland. Unfortunately nowadays their existence is not as certain anymore; it is therefore better to consume cod between July and December, so as not to disturb their reproductive season. The cod has little fat. You can smoke, bake or fry the fish. All parts can be used, the bones and head for fish soup and the cheeks are a delicacy. |
