Honey garlic eggplant

 

Asparagus Italian style

 
  • 2 MEDIUM SIZE EGGPLANTS, cut in pieces
  • PIECE OF GINGERROOT, grated
  • 2 CLOVES GARLIC, chopped
  • 2 TBSP TOMATO PUREE
  • 1 TBSP HARISSA
  • 1/2 TSP CUMIN POWDER
  • 1/2 TSP CORIANDER POWDER
  • 2 TBSP HONEY
  • 1 TBSP LEMON JUICE
 
  • 500 GRAM ASPARAGUS, peeled
  • 100 GRAM PARMESAN CHEESE. shaved
  • 5 TBSP OLIVE OIL
  • 1 TBSP SESAME SEED
Brush the eggplant pieces with olive oil and bake them in the oven for 20 minutes at 200 degrees Celsius. Stir fry the garlic for a few minutes and add the remaining ingredients. Bring this to the boil, arrange the eggplants in this sauce and simmer for 5 minutes.

Cook the asparagus for 15 minutes and put them in an oven tray. Mix the olive oil with the sesame seed and salt and pepper to taste and drizzle this over the asparagus. Sprinkle with cheese. put the asparagus under a hot grill shortly to melt the cheese.
