Harissa

 

Adzjika

  • 12 DRIED RED CHILI PEPPERS
  • 2 TBSP OLIVE OIL
  • 1 TSP SALT
  • 2 CLOVES GARLIC, chopped
  • 1 TSP CORIANDER SEED
  • 1 TSP CUMIN SEED
 
  • 2 RED BELL PEPPERS, chopped
  • 1 TOMATO
  • HANDFUL PARSLEY, cut
  • HANDFUL GREEN CORIANDER, cut
  • 2 CLOVES GARLIC, chopped

Soak the peppers 4 hours in hot water and drain them. Puree them together with the other ingredients. Put the sauce in a glass jar and keep it in the fridge.

Puree the tomato, the garlic and the bell peppers through a sieve. Add the coriander and parsley. Add salt and fresh milled pepper to taste. Serve with fried meat.
