Butterscotch pears

 

Apple pancake pie

  • 4 PEARS, peeled
  • 75 GRAM BUTTER
  • 1 CUP CREAM
  • 100 GRAM BROWN SUGAR
  • 1/2 TSP CINNAMON
  • 50 GRAM WALNUTS, chopped
 
  • 400 GRAM SELF RAISING FLOUR
  • 1 1/2 CUP MILK
  • 3 EGGS
  • 1 TSP VANILLA SUGAR
  • 100 GRAM SUGAR
  • 1 KG APPLES, peeled, cleaned and chopped
  • 50 GRAM ALMONDS, shaved

Bring the cream to the boil with the sugar, the butter and the cinnamon. Add the pears and cook 10 minutes. Put the pears on plates and pour the sauce on top; sprinkle with walnuts.

Mix the flour with the eggs, the vanilla sugar and the milk and bake 8 pancakes with this batter. Add a few tablespoons of water and 75 gram sugar to the apples, bring this to the boil and cook for 20 minutes until it is puree. Stack the pancakes with a layer of apple sauce and some shaved almonds between each pancake and sprinkle the remaining sugar on top. Bake the pie 20 minutes at 180 degrees Celsius
