Christmas pudding

 
  • 500 GRAM RAISINS, chopped
  • 2 TBSP MARMALADE
  • 2 TBSP PORT
  • 1 CUP APPLE SAUCE
  • 180 GRAM FLOUR
  • 1 TSP CINNAMON
  • 1 TBSP GINGER, grated
  • 1 TSP NUTMEG
  • 1 TSP ALLSPICE
  • 1 TBSP BAKING SODA
  • 125 GRAM BUTTER
  • 75 GRAM BROWN SUGAR
  • 2 EGGS
  • 1 TSP VANILLA SUGAR
  • 2 TBSP WHISKEY

Make a dough of flour, 2 egg yolks, butter and 75 gramsugar. Put in an oven dish, bake 10 minutes at 180 degrees Celsius. Cut the fruit and arrange it on the dough. Mix 3 eggs with the cream and 50 gram sugar and poor over the fruit. Bake 25 minutes more.

Mix raisins, marmalade, apple sauce and port and leave overnight. Add flour, spices and baking soda. Cream butter with sugar, eggs and vanilla and add to the mixture. Put in an oven dish and bake 2 hours at 160 degrees and 2 hours at 150 degrees Celsius. Pierce with a skewer and pour some whiskey over. Cover the cake airtight and leave for a month. Cover with glaze or marzipan or serve with CUSTARD SAUCE and brandy butter.

This enormous ingredient list is totally against the rules. However, there is no other way to prepare a Christmas cake and since it is so delicious and special, you can still find it here. After all, the exceptions confirm the rule.
