Apple charlotte

  • 40 GRAM BUTTER
  • 50 GRAM FLOUR
  • 150 GRAM SUGAR
  • 1 CARDAMOM POD, use inside seeds
  • 4 ORANGES, juice and rind
  • 3 EGG WHITES
  • 3 GELATIN LEAVES, soaked
  • 1 CUP CREAM
 
  • 6 APPLES, cleaned and cubed
  • 4 SLICES OF BREAD, without crust
  • 6 TBSP SUGAR
  • 60 GRAM BUTTER

Mix the butter with the flour, the cardamom, 1 egg white and 3 tablespoons sugar and knead this together. Make 4 circles of this dough on a greased baking sheet and bake the 8-10 minutes at 170 degrees Celsius. Put them inside a cup and shape them in a bowl form whilst they are still warm. Reduce the orange juice and rind on high heat to 4 tablespoons and dissolve the gelatin in it. Beat the egg whites until fluffy and slowly add the remaining sugar while beating. Whisk the cream. Carefully put the cream, egg whites and orange juice together. Put this mixture in the fridge for 4 hours. Put a few tablespoons of this orange mixture in each tuile.

Melt half of the butter aan spread this on one side over the bread. Cut the bread in such shapes, that you can line a round cake tin with it. Put bread on the botton and the sides. Bake the apples with the sugar for 15 minutes in the remaining butter. Put this mixture inside the bread slices. Bake the charlotte half an hour at 180 degrees Celsius. Allow the charlotte to cool down for 2 hours and turn it on a plate. Serve with whipped cream.
