Galettes de beurre

 

Egg cookies

  • 100 GRAM FLOUR
  • 100 GRAM SUGAR
  • 100 GRAM BUTTER, cold in cubes
  • 1 EGG
  • 2 EGG YOLKS
  • GRATED RIND FROM 1/2 LEMON
 
  • 125 GRAM SELF RAISIN FLOUR
  • 100 GRAM SUGAR
  • 2 EGGS

Knead flour, butter, sugar, lemon rind, the egg and 1 egg yolk well together and put the dough into a large mould or small round moulds. Don't just form circles on a baking try because your cookie will become one large rectangular disaster cookie-tray. Brush the top side with the remaining egg yolk and bake 20 minutes at 180 degrees Celsius.

Beat the eggs with the sugar for 5 minutes, using an electric mixer. Carefully stir in the flour. Wait for 5 minutes, then make 6 heaps on a greased baking tray. Leave enough space in between the cookies. Bake 12-15 minutes at 180 degrees Celsius.
