Knead flour, butter,
sugar, lemon rind, the egg and 1 egg yolk well together and put the
dough into a large mould or small round moulds. Don't just form circles
on a baking try because your cookie will become one large rectangular
disaster cookie-tray. Brush the top side with the remaining egg yolk
and bake 20 minutes at 180 degrees Celsius.

Beat the eggs with the sugar for 5 minutes, using
an electric mixer. Carefully stir in the flour. Wait for 5 minutes,
then make 6 heaps on a greased baking tray. Leave enough space in between
the cookies. Bake 12-15 minutes at 180 degrees
Celsius.
