Beetroot salad with goat cheese

 

Pilaki

  • 400 GRAM BEETROOT, in thin slices
  • 2 CLOVES GARLIC, chopped
  • 3 TBSP OLIVE OIL
  • 2 TBSP LEMON JUICE
  • 75 GRAM GOAT CHEESE, cubed
  • HANDFUL PARSLEY, cut
 
  • 3 TOMATOES, cut in 8 pieces
  • 300 GRAM WHITE BEANS
  • 1 ONION, sliced
  • 20 OLIVES, halved
  • 3 EGGS, boiled 10 minutes and quarters
  • HANDFUL MINT, chopped
  • 3 TBSP OLIVE OIL
  • 2 TBSP LEMON JUICE
  • 1 TBSP DILL, chopped

Beat the olive oil and lemon juice together with garlic and salt and pepper to taste for the dressing. Mix the beetroot with the cheese, pour the dressing on top and sprinkle with parsley.

Mix for the dressing the lemon juice with the olive oil, mint leaves, dill ad pepper and salt to taste. Arrange the other ingredients on a large plate and pour the dressing on top.
