Stir the egg yolks together with the sugar and a few tablespoons
of milk. Bring the remaining milk to the boil, add the yolk mixture
and heat slowly while stirring, until it thickens. Don't cook! Allow
this mixture to cool down; add the cream cheese and meringue and stir
well. Make ice cream with this mixture using an ice cream machine or
put in the freezer for 5 hours, stir every hour.

Grind the pistachios
finely. Mix the egg yolks, the sugar, the milk and half of the cream
together and heat the mixture, either au bain marie or in the micro
wave, first 30 seconds and then 15 seconds every time. Keep mixing.
When the mixture thickens and is hot, add the rest of the cream and
the ground pistachios. Allow the mixture to cool down. Freeze for at
least 4 hours, stir every hour, or use an electrical ice cream maker.
