Inspired by the book
"Karibu. Welcome to the cooking of Kenya" by Ann Gardner. Nyandarua
is a district in the Central Province of Kenya.
Cook the potatoes 20
minutes, peel them and slice them. Stir fry the onion 3 minutes; add
the spinach and stir fry until it has shrunk. Chop it. Distribute half
of the potatoes over an oven dish, followed by the spinach and the chick
peas. Close with the second half of potato slices. Arrange the tomatoes
on top. Mix the cream with the eggs and pepper and salt to taste and
pour this over the potatoes. Sprinkle the cheese on top and bake the
gratin 20 minutes at 200 degrees Celsius.
