Brazo de Mercedes

 

Crepes Suzettes

  • 8 EGGS, split
  • 300 GRAM CONDENSED MILK
  • 100 GRAM SUGAR
  • RIND FROM 1 LEMON
  • 50 GRAM ALMOND PASTE
  • ICING SUGAR
 

Beat the egg whites until fluffy and gradually add the sugar; keep beating. Put waxed paper on a baking tray and spread the meringue mixture evenly. Bake 10 minutes on 190 degrees and turn the meringue upside down on a new sheet of waxed paper. Mix the egg yolks with the condensed milk, the lemon rind and almond paste and heat this mixture in the microwave, half a minute each time, stirring in between, until the mixture is thick and hot. Spread the yolk mixture over the meringue and roll the meringue lengthwise. Sprinkle with icing sugar and cut in slices.

Mix the flour, eggs and milk and bake 8 very thin pancakes out of this batter. Heat half of the orange juice, half of the butter, half of the sugar and half of the marmalade in a frying pan. Fold 4 pancakes in four and arrange them in the orange juice mixture; heat well, turn them around and heat one minute more. Pour 1/2 glass liqueur on top and light immediately with a match to flambé. Don't forget to switch off the ventilation hood!
