Fried banana with almonds

 

Strawberry custard

  • 4 BANANAS, peeled and halved
  • 4 TBSP HONEY
  • 4 TBSP WHITE WINE
  • 50 GRAM SHAVED ALMONDS
 
  • 500 GRAM STRAWBERRIES, pureed
  • CREAM, whipped with
  • 3 TBSP SUGAR
  • 2 CUPS MILK
  • 3 TBSP SUGAR
  • 2 TBSP CUSTARD POWDER
  • 1 EGG YOLK

Fry the banana halves 4 minutes on each side. Add the honey and wine and simmer for 5 minutes. Put the bananas on plates, pour the honey mixture on top and sprinkle with almonds.

Dissolve the custard powder, the egg yolk and 3 tablespoons sugar in a few tablespoons milk. Bring the remaining milk to the boil. Add the custard mixture and heat while stirring until the mixture thickens and almost boils. Allow this custard to cool down. Distribute half of the custard over 4 high glasses, followed by half of the strawberry puree and half of the cream. Repeat this process. Decorate with a strawberry.
