Olivada

 

Red curry paste

  • 100 GRAM OLIVES , without pit
  • 2 CLOVES GARLIC, chopped
  • 4 TBSP OLIVE OIL
  • SALT AND PEPPER TO TASTE
 
  • 10 RED CHILLIES
  • 2 SHALLOTS, chopped
  • 2 CLOVES GARLIC, chopped
  • PIECE OF GALANGAL, chopped
  • 2 STEMS LEMON GRASS, chopped
  • 2 KAFFIR LIME LEAVES, torn
  • 1 TSP GINGERROOT, chopped
  • 1 TBSP PEPPER, milled
  • 1 TBSP SHRIMP PASTE
  • 1 TSP CUMIN SEEDS

Puree all ingredients coarsely in a food processor. Serve on toast or use in recipes.

Puree all ingredients in a food processor or use mortar and pestle. Put in a glass jar and store in the fridge.
