Asparagus salad
with salmon

Goat cheese and
raspberry salad

- 200 GRAM LETTUCE
- 100 GRAM RUCOLA
- 100 GRAM RASPBERRIES, halved
- 50 GRAM GOAT CHEESE, cubed
- 50 GRAM WALNUTS, chopped
- 3 TBSP RASPBERRY VINEGAR
- 4 TBSP OLIVE OIL

Mix, for the dressing,
the mayonnaise with the horseradish and lemon juice and pepper and salt
to taste. Cut the salmon and the asparagus in pieces and put them in
a bowl, together with the apples. Pour the dressing on top.

Mix, for the dressing,
olive oil with vinegar and pepper and salt to taste. Mix the lettuce
with the rucola and put this in a large salad bowl. Distribute the cheese,
walnuts and raspberries on top and pour the dressing on the salad just
before serving.
