Dry roast the spices for a few minutes, except ginger
and cinnamon powder. Grind them well, using a mortar and pestle or coffee
grinder. Stir in the ginger and cinnamon. Store airtight.
Masala in Indian means "spice". Garam masala means
"warm spice" or "hot spice", even though it is not "spicy" like chili
pepper or curry. Like curry, there are many different recipes of garam
masala, differing per region, country and even per cook.
