Lassi

 

Garam masala

  • 1/2 LITER YOGURT
  • 1 1/2 TSP SALT
  • 1 TSP ANISEED
 
  • 3 TBSP CORIANDER SEEDS
  • 3 TBSP CUMIN SEEDS
  • 1 TBSP BLACK PEPPERCORNS
  • 2 TSP CARDAMOM PODS, split and seeds taken out
  • 2 TSP CINNAMON POWDER
  • 1 TSP CLOVES
  • 1 TSP NUTMEG, grated
  • 1 TSP GINGER POWDER

Mix all ingredients well and add half a liter of water. Put the mixture in the fridge for one hour. Sieve out the seeds and serve the lassi with ice cubes.

Dry roast the spices for a few minutes, except ginger and cinnamon powder. Grind them well, using a mortar and pestle or coffee grinder. Stir in the ginger and cinnamon. Store airtight.

Masala in Indian means "spice". Garam masala means "warm spice" or "hot spice", even though it is not "spicy" like chili pepper or curry. Like curry, there are many different recipes of garam masala, differing per region, country and even per cook.
