- 600 GRAM CHICKEN BREAST
- 2 EGGS
- 2 CLOVES GARLIC, chopped
- 100 GRAM SOFT BUTTER
- HANDFUL PARSLEY, chopped
- 50 GRAM FLOUR
- 100 GRAM BREAD CRUMBS

- 500 GRAM SPAGHETTI, cooked al dente
- 50 GRAM SPINACH, chopped
- 100 GRAM DRIED TOMATOES, chopped
- 4 EGGS
- 150 GRAM CHEESE, grated
- 1 TSP SAMBAL
- HANDFUL BASIL LEAVES

Cut the chicken breasts
open and roll them out with a rolling pin. Mix the butter with the parsley
and the garlic and put a few tablespoons of this mixture in the middle
of each chicken breast. Fold the meat around the butter and close it
well, use tooth picks if needed. Roll the chicken first through flour,
then through egg and finally through breadcrumbs. Heat a layer of 1
centimeter oil in a frying pan and fry the chicken 10 minutes on each
sides.

Mix the eggs with the
sambal, the spinach, the tomatoes, the cheese, the basil and salt and
fresh milled pepper to taste and stir this mixture through the spaghetti.
Put the spaghetti in a greased quiche mold. Bake the pie half an hour
in the oven at 200 degrees Celsius.
