Bittersweet drumsticks
|

Beef stir fry with
Amarula
|
|
|
- 400 GRAM BEEF, in strips
- 1 1/2 CUP COCONUT CREAM
- 1/2 CUP AMARULA
- BUNCH OF GREEN ONIONS, chopped
- PIECE OF GINGERROOT, grated
- 2 RED CHILLIES, chopped
- HANDFUL GREEN CORIANDER

Fry the drumsticks in oil until brown on all sides.
Mix the remaining ingredients and add pepper and salt to taste. Pour
this over the drumsticks. Bring this to the boil and simmer for 25 minutes.
Take the drumsticks out, put them on a plate and pour the sauce on top.

Stir fry the chillies,
onions and ginger for three minutes. Add the beef and stir fry for 3
minutes more. Add the coconut milk and pepper and salt to taste. Bring
to the boil and simmer for 10 minutes. Add the Amarula and heat for
1 minute more. Sprinkle with green coriander and serve with noodles.
