Strawberry fool

 

Plum cream

  • 1 CUP MILK
  • 2 EGG YOLKS
  • 1 TBSP CUSTARD POWDER
  • 500 GRAM STRAWBERRIES, pureed with
  • 4 TBSP SUGAR
  • 1 CUP CREAM, whipped
 
  • 750 GRAM PLUMS, cleaned and pureed
  • 2 EGG YOLKS
  • 2 LEAVES OF GELATIN, soaked
  • 1 CUP CREAM, whipped
  • 4 TBSP SUGAR

Put the custard powder and the egg yolks together with 3 tablespoons of milk and stir. Bring the remaining milk to the boil. Add the custard mixture and heat, whilst stirring, until it almost boils. Allow this mixture to cool down and mix it with the cream and the strawberry puree. Refrigerate for one hour. Decorate with a strawberry.

Add the egg yolks and the sugar to the plumbs and heat this mixture until it almost boils. Dissolve the gelatin. Allow it to cool down and add the cream. Stir well, refrigerate for 2 hours before serving.
