Almond curls (Kletskoppen)

  • 200 GRAM FLOUR
  • 75 GRAM HONEY
  • 80 GRAM SUGAR
  • 1/2 TSP BAKING SODA
  • 50 GRAM SHAVED ALMONDS
  • RIND OF 1/2 LEMON
  • 1 EGG
  • 25 GRAM BUTTER, melted
  • 70 GRAM ICING SUGAR
  • 70 GRAM CHOCOLATE
  •  
    • 50 GRAM FLOUR
    • 150 GRAM SUGAR
    • 30 GRAM BUTTER, soft
    • 25 GRAM SHAVED ALMONDS
    • PINCH OF CINNAMON
    Mix the butter with the flour, the baking soda, the egg, the sugar, the honey, the almonds and the lemon rind and knead for 1/2 minute. Roll the dough out and cut heart shapes; bake them 10-12 minutes in the oven at 180 degrees Celsius and allow them to cool down. Mix the icing sugar with 1 tablespoon of water. Melt the chocolate and mix with the icing. Dip half of the cookies in the chocolate mixture and let them cool down.

    Mix all ingredients well and for around 15 balls. Put them on a greased oven tray with at least 6 centimeters in between them. Bake 7 minutes at 180 degrees Celsius. Allow the cookies to cool down for half a minute and then shape them into curls around a rolling pin.

    "Kletskoppen" in Dutch means "talking heads'', especially the kind of talking you would do over a cup of coffee or tea.
