Lemon pudding

  • 225 GRAM SELF RAISING FLOUR
  • 50 GRAM WALNUTS, chopped
  • 1/2 CUP COFFEE
  • 125 GRAM BROWN SUGAR
  • 3 EGGS
  • 3 TBSP BRANDY
  • 75 GRAM HONEY
  • 2 TBSP OIL
  • 1/2 TSP GINGER POWDER
  • 75 GRAM RAISINS

Mix the flour with the eggs, 150 gram sugar, 150 gram butter, the milk and the rind of 2 lemons. Pour this batter into muffin molds and bake them 20 minutes at 180 degrees Celsius. Allow them to cool down. Heat the juice of 3 lemons. Add the remaining sugar and the rind of the last lemon and cook on high heat for 2 minutes. Add the remaining (cold) butter and whisk for a minute or so. Add the liqueur, stir well. Pour the sauce over the pudding.

Mix the eggs with the honey, the oil, the sugar, the coffee and the brandy and stir well. Add the remaining ingredients and stir everything well together. Put the mixture into a greased baking pan and bake the lekach 45 minutes at 170 degrees Celsius.
