Knead all ingredients well together and put the dough in the fridge
for half an hour. Make a roll of the dough and cut it into slices. Put
these cookies on a greased baking tray and bake them 10-15 minutes at
170 degrees
Celsius.

Put the semolina together
with the baking powder, 1/2 cup of olive oil and 1/2 cup of water. Knead
well; add some Oil if needed. Allow the dough to rest half an hour.
Puree the dates with the remaining oil, the orange rind, the cinnamon
and 3 tablespoons of hot water. Divide the dough in two and roll out
each piece to a rectangle. Make to rolls out of the date mixture, with
the length of the dough, and put them on the dough; roll the dough up.
Cut cookies and leave them for an hour. Deep fry them at 180 degrees
Celsius until golden brown.
