Elderberry orange jam

 

Ponce alla livornese

 
  • 1/2 CUP STRONG COFFEE
  • 2 TSP SUGAR
  • 1 TBSP LEMON JUICE
  • PINCH OF CINNAMON
  • 1/4 CUP RUM

Bring the elderberries and the oranges and orange juice to the boil and simmer for 15 minutes while stirring. Add the sugar and cook 15 minutes more, while stirring, on low heat. Pour the jam in glass jars.

Stir the sugar and coffee well together. Add the other ingredients and mix well. Serve in a small glass.

Ponce was often served in bars to fishermen who came home from a cold and wet fishing trip.
