Coffee panna cotta

 

Santa Claus pudding

 
  • 1/2 CUP VERY STRONG ESPRESSO
  • 2 CUPS CREAM
  • 3 LEAVES GELATIN, soaked
  • 4 TBSP SUGAR
  • 150 GRAM MASCARPONE
  • 50 GRAM CHOCOLATE, chopped
 
  • 3 CUPS MILK
  • 3 TBSP CUSTARD POWDER
  • 4 TBSP SUGAR
  • 1/2 CUP STRONG COFFEE
  • 100 GRAM KRUIDNOTEN, crumbled

Bring 1 1/2 cup of cream to the boil with the sugar and simmer for 5 minutes. Dissolve the gelatin. Add the coffee and allow the mixture to cool down for half an hour. Add the mascarpone and mix well. Pour this mixture into glasses and refrigerate for 2 hours. Whip the remaining cream and distribute this over the panna cotta. Sprinkle with chocolate.

Panna cotta in Italian means "cooked cream". You can make it plain and serve it with caramel sauce or fresh fruits (or without anything) or with yogurt and with chocolate it is also delicious.

Stir the sugar and the custard powder together with the coffee. Bring the milk to the boil. Add the custard mixture, heat slowly, while stirring, until the mixture thickens. Add three quarters of the kruidnoten and distribute the mixture over small bowls. Allow to cool down and sprinkle the remaining kruidnoten on top.
