Chicken breast with avocado mayonnaise

  • 6 EGGS
  • 1 ONION, chopped
  • BUNCH OF CHIVES
  • PIECE OF GINGERROOT, grated
  • 2 TBSP SOY SAUCE
  • 2 TBSP SHERRY

Distribute the lettuce over 4 wide glasses. Stir fry the chicken breast 7 minutes. Add the sambal, the lemon juice, the soy sauce and pepper and salt to taste. Put this mixture on top of the lettuce. Mash the avocado and mix with the mayonnaise. Add pepper and salt to taste and spoon this on the chicken breast.

Cut half of the chives in small pieces. Beat the eggs with 4 tablespoons of water, the onion, the cut chives, the ginger and pepper and salt to taste and make 4 omelets out of this mixture. Put some chive stems in the middle of each omelet and roll it up; cut it in 2. Mix the soy sauce with the sherry and drizzle it over the omelet.
