Herring salad

 

Fig salad

  • 200 GRAM GREEN LETTUCE, torn to pieces
  • 2 APPLES, peeled and cut
  • 4 HERRINGS, cut in chunks
  • 2 RED BEETROOTS, cooked, peeled and cubed
  • 2 GHERKINS, cut
  • 2 EGGS, boiled 10 minutes, peeled and chopped
  • 2 TBSP VINEGAR
  • 1 SMALL ONION, chopped
  • 3 TBSP OIL
 
  • 6 FIGS
  • 200 GRAM PARMA HAM
  • 1 BOLL MOZZARELLA, sliced
  • 3 TBSP LEMON JUICE
  • 1 TBSP HONEY
  • 3 TBSP OLIVE OIL
  • SALT AND FRESH MILLED PEPPER

Put some lettuce on a large plate. Mix the rest of the lettuce with the other ingredients and put this mixture on top of the lettuce. Decorate with a slice of egg.

Cut the figs in 4 but leave them together at the bottom. Arrange the figs, mozzarella and Parma ham on 4 plates. For the dressing, whisk the lemon juice with the honey and the olive oil and pour over the salad. Sprinkle with pepper and salt.
