Plum dumplings

 

Coffee surprise

  • 500 GRAM POTATOES, cooked
  • 125 GRAM FLOUR
  • 2 EGGS
  • 5 PLUMS
  • 6 TBSP SUGAR
  • 2 TBSP BREAD CRUMBS
  • 2 TBSP BUTTER
 
  • 4 CUPS COFFEE
  • 1 CUP AMARULA
  • 8 MARSHMALLOWS, in quarters
  • 1 CUP CREAM, whipped
  • 4 TBSP SUGAR
  • 1 TBSP CACAO POWDER

Cook the plums for 5 minutes, drain and add 4 tablespoons of sugar; puree the mixture. Puree the potatoes and mix with the flour and the egg to a dough. Add some water or flour to get the right consistency. Roll it out and cut circles with a glass. Put two teaspoons plum puree in the middle and close the circles. Poach them ten minutes. Heat the butter until brown and fry the bread crumbs and the remaining sugar. Sprinkle this over the dumplings.

Pour the coffee in cups, add the sugar and stir. Add the Amarula. Distribute first the cream over the cups, then the marshmallows and sprinkle with cacao powder.
