Haagse bluf

 

Churros

 

Beat the egg whites until they are fluffy, using an electrical mixer. Slowly add the sugar, keep mixing; after that, slowly add the red currant juice while mixing. Spoon the mixture in a glass or on top of a beschuit, decorate with a berry or a little jam.

"Haagse bluf" means "Bluff from The Hague". On the 13th of May 1619, Johan van Oldebarneveldt, a famous politician from The Netherlands, was executed in The Hague. Bring 1 cup of water to the boil with the butter. Add the flour and keep stirring over low heat until the batter becomes a ball. Take the pan off the heat and stir in the eggs one by one. Make small forms using a piping bag and deep-fry them until the are golden brown. Melt the chocolate with the cream. Dust the churros with icing sugar and dip them into the chocolate mixture.

This is a Mexican recipe. 30 September in Mexico is celebrated as "Morelo's birthday" since Father José Maria Morelos y Pavin, one of the founding fathers who led the Independence War against Spain, was born on that date in 1765.
