Mushrooms with walnuts   Curry corn
 
  • 250 GRAM MUSHROOMS, quartered
  • 50 GRAM WALNUTS, chopped
  • 40 GRAM BUTTER
  • 1 CUP VEGETABLE STOCK
  • 1 ONION, chopped
  • HANDFUL GREEN CORIANDER, chopped
 
  • 400 GRAM CORN
  • 1 ONION, chopped
  • 1 TSP CURRY POWDER
  • 1 CUP COCONUT MILK
  • 1/2 TBSP CORN STARCH
  • 2 TOMATOES, cubed
  • 1 CLOVE GARLIC, chopped
  • Stir fry the onion 5 minutes in the butter. Add the mushrooms and stir fry a few minutes on high heat. Add the stock, bring to the boil, put a lid on the pan and simmer for 10 minutes. Add the walnuts and stir. Sprinkle with coriander.
    Stir fry the onions and garlic 5 minutes. Add the curry powder and stir fry 1 minute more. Mix the corn starch with the coconut milk and add this, as well as the tomatoes and the corn. Bring to the boil and simmer for 5 minutes.
