Chicken cashew satay

 
  • 1 HAM (700-1000 gram)
  • 400 GRAM FLOUR
  • 2 TSP YEAST
  • 1 TSP SALT
  • 50 GRAM BUTTER
 
  • 600 GRAM CHICKEN BREAST, cut in long strips
  • 5 TBSP SOY SAUCE
  • 2 CLOVES GARLIC, mashed
  • 1 CUP COCONUT MILK
  • 4 TBSP LEMON JUICE
  • 2 TBSP OIL
  • 4 TBSP PEANUT BUTTER
  • 100 GRAM CASHEW NUTS, chopped
  • 2 CHILI PEPPERS, chopped

Fry the ham in butter until brown on all sides, turn the heat low, put a lid on the pan and simmer for 10 minutes. Allow it to cool down. In the meantime, mIx the flour with the yeast and the salt and 200 gram water and knead for 10 minutes. Allow the dough to rise for 1 hour and roll it out to a rectangle. Wrap the ham in the dough; bake it for 40 minutes in the oven at 180 degrees Celsius.

Mix 3 tablespoons soy sauce with the oil, garlic and 2 tablespoons lemon juice and marinate the chicken in this mixture for 4 hours. Thread the chicken on skewers and grill them until well done. In the meantime, put the remaining lemon juice, the rest of the soy sauce, the peanut butter, the coconut milk, the cashew nuts and the peppers and add as much water as needed to make a smooth sauce. Heat this slowly, while stirring. Serve the satay with the sauce.
