Potato pesto patties

 

Curry potatoes

  • 6 POTATOES, peeled and grated
  • 3 TBSP PESTO
  • 3 EGGS
  • 2 TBSP FLOUR
  • 2 CLOVES GARLIC, chopped
 

Mix all ingredients and add pepper and salt to taste. Shape this mixture into 12 patties and fry these in olive oil, about 10 minutes per side.

Pesto is delicious just on a slice of bread, but you can also use it in many recipes. The Worldcook website has a page on recipes with pesto to inspire you.

Cook the potatoes 10 minutes and cut them in wedges. Melt the butter and mix it with the olive oil, the curry powder and pepper and salt to taste. Roll the potato wedges through this mixture so they are all covered. Put the potatoes on a baking tray and bake them 40 minutes in the oven at 200 degrees Celsius.
