- 400 GRAM WHITE BEANS, cooked
- 1 ONION, chopped
- 2 CLOVES GARLIC, chopped
- 100 GRAM CHORIZO, cubed
- HANDFUL PARSLEY, chopped
- HANDFUL MINT, chopped
- 2 TBSP OLIVE OIL
- 2 TBSP VINEGAR

- 300 GRAM CHICKEN BREAST, in strips
- 200 GRAM PAPAYA, cubed
- 1 MANGO, peeled and cubed
- 150 GRAM GRAPES, halved
- 75 GRAM WALNUTS, chopped
- 3 TBSP ORANGE JUICE
- 2 TBSP VINEGAR
- 1 TBSP MAYONNAISE
- 1 TSP MUSTARD

Stir fry the onion
and garlic 5 minutes and allow them to cool down. Beat for the dressing
the oil with the vinegar and pepper and salt to taste. Mix the beans
with the onions, the chorizo, the parsley and the mint and pour the
dressing on top. Toss before serving.

Stir, for the dressing,
the orange juice together with the vinegar, the mayonnaise and the mustard.
Stir fry the chicken 20 minutes and allow it to cool down. Put the chicken,
the papaya, the mango, the grapes and the walnuts in a salad bowl and
pour the dressing on top. Toss the salad before serving.
