Russian eggs

Qahwah bel habahan
Cardamom coffee

  • 6 EGGS, boiled 10 minutes
  • 1 SMALL CAN OF SARDINES
  • 1/2 TBSP MUSTARD
  • 5 TBSP MAYONNAISE
  • 2 CUPS COLD WATER
  • 2 PODS CARDAMOM
  • 3 TSP SUGAR
  • 2 TBSP DARK ROASTED COFFEE

Peel the eggs and cut them in halves. Keep a few sardines behind for decoration and puree the other sardines with the egg yolks, the mustard, he mayonnaise and salt en pepper to taste. Stuff the eggs with this mixture and garnish with a piece of sardine.

Put all ingredients in a small pan (special pans exist for this process) and bring the mixture on very low heat in 10 minutes to the boiling point. Make sure it does not boil completely. Some people call it Arabian coffee, some call it Turkish coffee, but Egyptians are extremely offended if you do that. For them, it is either qahwah (akhwah) or Nescafé, and they are sure that this coffee comes from Egypt and not from Turkey or anywhere else. You can also prepare it without cardamom. This is coffee to bite in!
