Green curry paste

 

Curry powder

  • 50 GRAM GREEN PEPPERS
  • 2 SHALLOTS, chopped
  • 2 STEMS LEMON GRASS, chopped
  • PIECE OF GINGERROOT, chopped
  • 2 KAFFIR LIME LEAVES
  • RIND OF 1 LEMON
  • 1 TSP SUGAR
  • 1 TBSP SHRIMP PASTE
  • 2 CLOVES GARLIC, chopped
  • 3 TBSP OIL
 
  • 5 TSP CORIANDER POWDER
  • 1 TSP CUMIN POWDER
  • 2 TSP CHILI POWDER
  • 1 TSP BLACK PEPPER, ground
  • 1 TSP TURMERIC
  • 1 TSP FIVE SPICES POWDER
  • 5 CARDAMOM PODS, split open and use inside seeds

Puree all ingredients in a food processor until it becomes a thick paste. Keep in the fridge in a glass jar.

Mix all spices well together. Store airtight.

There are probably thousands of recipes for curry powder. Try and mix your own blend. You will need turmeric for the yellow color and chili powder to make it "hot".
