Qaurma - Liver in wine sauce

Omelet envelopes
|
- 400 GRAM LIVER, cut in strips
- 50 GRAM BUTTER
- 1 BELL PEPPER, sliced
- 1 ONION, chopped
- 2 TOMATOES, cubed
- 1 GLASS (GEORGIAN) RED WINE
- HANDFUL PARSLEY, chopped
- HANDFUL CORIANDER, chopped
- 1 TSP PAPRIKA POWDER

- 8 EGGS
- 200 GRAM MINCED BEEF
- 1 ONION, chopped
- 1/2 TBSP CURRY PASTE
- 2 CARROTS, cubed
- 4 TOMATOES, cubed
- 1 TBSP SOY SAUCE
- 1/4 CHINESE CABBAGE, shredded
- GREEN CORIANDER, chopped

Fry the onion 3 minutes
in the butter; add the bell pepper and fry 3 minutes more. Add the liver,
and fry 5 minutes on low heat. Add the tomatoes, the wine, the paprika
powder and pepper and salt to taste, bring this to the boil and simmer
for 10 minutes. Sprinkle with green herbs.

Mix the eggs with 5 tablespoons of water and pepper
and salt to taste and make 4 omelets out of this mixture. Stir fry the
onion and carrots 3 minutes, add the cabbage and fry 5 minutes more.
Add the minced beef and fry 5 minutes. Finally add the soy sauce, the
curry paste and the tomatoes. Distribute this mixture over the omelets
and fold them like envelopes. Put them in a square baking pan and bake
them 10 minutes at 200 degrees Celsius.
Sprinkle with coriander.
