Roll out the pastry until it is approximately 1/2
centimeter thick, and cut circles with a large glass. Roll them out
to ovals, brush them with egg and sprinkle with sugar. Bake them in
the oven for 15 minutes at 220 degrees Celsius.
There is a discussion ongoing on the internet on
the true name of these cookies. The official name seems to be "Arnhem
biscuits" and as I respect my readers, especially if they seem to know
better than me, I changed the name in the hyperlinks. In a technical
sense, however, they are not really biscuits, and as I like the poetical
sound of the "Arnhem girls", I have left both. I would like to invite
