Corn avocado salad

 

Watermelon salad

  • 1 CAN OF CORN, drained
  • 1 AVOCADO, cleaned and cut
  • 2 TOMATOES, cut
  • 100 GRAM BROAD BEANS
  • BUNCH OF GREEN ONIONS, chopped
  • FRESH BASIL, chopped
  • 3 TBSP MAYONNAISE
  • 2 TBSP ORANGE JUICE
 
  • 1/2 WATERMELON, in cubes
  • 100 GRAM FETA, in cubes
  • 50 GRAM PISTACHIOS, chopped
  • 2 TBSP OLIVE OIL
  • 2 TBSP VINEGAR
  • SALT AND FRESH MILLED PEPPER

For the dressing, mix together orange juice and mayonnaise. Put all the other ingredients together and toss, pour the dressing on top. Put in the fridge for half an hour.

Mix the watermelon with the feta and the pistachios and put in a big glass bowl. Beat together olive oil, vinegar and salt and pepper and pour over the watermelon.
