Coriander pork

  Meatloaf
  • 600 GRAM PORK FILLET
  • 1 TSP CORIANDER POWDER
  • 4 TBSP OLIVE OIL
  • 2 TBSP SOY SAUCE
  • 1 CLOVE GARLIC, mashed
  • 1/2 TSP CINNAMON
  • 200 GRAM ROSE WINE
  • GREEN CORIANDER, chopped
 
  • 500 GRAM MINCED BEEF
  • 500 GRAM MINCED PORK
  • 3 ONIONS, chopped very fine
  • 2 CLOVES GARLIC, minced
  • 1 EGG
  • 3 SLICES BREAD, soaked in
  • 50 GRAM MILK
  • 150 GRAM RED WINE
  • 2 RED PEPPERS, chopped very fine
  • 200 GRAM BACON, in slices

Mix the pork fillet cubes with 100 gram rose wine, coriander powder, cinnamon, garlic, olive oil and soy sauce. Marinate for at least 8 hours. Take the meat out of the marinade and make it dry. Stir fry for 15 minutes until the meat is nice and brown. Add the marinade and the rest of the wine, boil on high heat until the liquid has evaporated, Decorate with green coriander.

Crumble the bread. Mix all ingredients, except the bacon, together en knead well; put the mixture in a bread form. Distribute the bacon on top. Fill a baking tray with water, put it in the oven. Put the bread tin with its bottom in the water and bake 2 hours at 200 degrees Celsius.
