Onions à la Grecque

 

Cucumber sambal

 
  • 1 KG SMALL ONIONS, peeled
  • 2 CUPS WHITE WINE
  • 2 TBSP TOMATO PUREE
  • 2 TBSP SUGAR
  • 10 JUNIPER BERRIES
  • HANDFUL BASIL LEAVES, chopped
  • 1 BAY LEAF
 
  • 1 CUCUMBER, peeled and grated
  • 1 RED PEPPER, chopped
  • 1 TBSP VINEGAR
  • 1 APPLE, peeled and grated
  • 1 CLOVE GARLIC, chopped
  • 1/2 TSP SALT

Put all ingredients except the basil leaves in a pan and bring this mixture to the boil. Simmer for 20 minutes. Take the onions out, discard the juniper berries and the bay leaf and reduce the fluid on high heat to half to use as sauce. Allow the onions to cool down and serve with the sauce. Sprinkle with basil leaves.

Mix the cucumber with the salt; throw away the fluid after a couple of hours. Mix the cucumber with the remaining ingredients.
