Cajun potato salad

   
  • 8 POTATOES, peeled, cooked and in large cubes
  • 1 RED BELL PEPPER, cut
  • BUNCH OF SPRING ONIONS, chopped
  • 2 GHERKINS, chopped
  • 3 EGGS, hard boiled and cut
  • 1 CUP MAYONNAISE
  • 1 TBSP MUSTARD
  • 1 TSP CAYENNE PEPPER
  • 1 TSP TABASCO
   
Mix, for the dressing, the mayonnaise with the mustard and the tabasco and pepper and salt to taste. Put the potatoes, the gherkins, the bell pepper, the eggs and the spring onions together in a salad bowl, add the dressing and toss carefully. Sprinkle with cayenne pepper.
