Tropical fruit cake

 

Deep fruit pie

  • 150 GRAM FLOUR
  • 4 EGGS, split
  • 150 GRAM SUGAR
  • 1 MANGO, peeled and cubed
  • 1 BANANA, peeled and cut
  • 4 SLICES PINEAPPLE, cut
  • 1/2 TSP CINNAMON
  • 1/2 TSP ANISEED
 
  • 100 GRAM CREAM CHEESE
  • 100 GRAM BUTTER, cold and cubed
  • 150 GRAM FLOUR
  • 2 APPLES, peeled and cut
  • 500 GRAM BLACKBERRIES
  • 250 GRAM STRAWBERRIES, cleaned
  • 8 TBSP SUGAR
  • JUICE AND RIND OF 2 ORANGES

Mix the mango, the banana and the pineapple and put this on the bottom of baking pan. Sprinkle with aniseed. Whisk the egg whites until they are fluffy, add the sugar while beating. Add the egg yolks, the flour and cinnamon and stir carefully. Pour the batter over the fruit. Bake the cake 35 minutes at 180 degrees Celsius.

Mix the cream cheese with the butter and flour and knead this well. Put the dough in the fridge for one hour. Bring the orange juice and rind to the boil with the sugar and simmer for 5 minutes. Mix the fruits and put them in a baking pan, pour the orange syrup on top. Roll out the dough to the size of the baking pan and put this circle on top of the fruits. Make some holes in it. Bake the pie 30 minutes at 180 degrees Celsius.
