Honey cake

 

Orange almond cake

 
  • 300 GRAM SELF RAISING FLOUR
  • 250 GRAM BUTTER, soft
  • 200 GRAM HONEY
  • 150 GRAM BROWN SUGAR
  • 1 TSP CINNAMON
  • 1 TSP GINGER POWDER
  • 200 GRAM DATES, chopped
  • 2 EGGS
  • 50 GRAM SHAVED ALMONDS
  • 1/2 CUP TEA
  •  
    • 150 GRAM SELF RAISING FLOUR
    • 100 GRAM SHAVED ALMONDS
    •  4 EGGS
    • 150 GRAM SOFT BUTTER
    • 2 ORANGES, in thin slices
    • 200 GRAM SUGAR
    Sprinkle a greased round cake mold with shaved almonds. Mix the tea with the eggs, the sugar, the honey, the cinnamon, the ginger powder and the butter, whisk a few minutes. Add the flour,stir; finally add the dates and stir. Spoon the batter into the mold and bake the cake 90 minutes at 160 degrees Celsius.

    Bring half a cup of water to the boil with half of the sugar and poach the oranges 15 minutes in this syrup. In the meantime, whisk the eggs with the remaining sugar for 5 minutes, add the butter and stir well, add the flour and the almonds and stir. Put the orange slices on the bottom of a greased cake mold and pour the syrup on top. Spoon the batter on the syrup and bake the cake 40 minutes at 160 degrees Celsius. Turn the cake upside down.
